Chargrilled cockles with habanero chilli, mini (75 g)

Chargrilled cockles from Conservas Braseadas Güeyumar, mini size, in a 75 g tin (35 g drained). The cockles (Cerastoderma edule) come from Noia in Galicia. They are grilled over a blend of birch, beech and oak wood and packed in Arbequina extra virgin olive oil from Castillo de Canena with a touch of habanero chilli.

Güeyumar preserves come from Ribadesella, Asturias, and grew out of Güeyu Mar, chef Abel Álvarez's grill restaurant on Playa de Vega, where fish and seafood are cooked over embers.

Serve them straight from the tin as a tapa or with an aperitif.
