Guindillas de Ibarra from Txumitxa: long, thin green chilli peppers pickled in wine vinegar, in a 335 g jar (130 g drained). These piparras from Ibarra in Gipuzkoa are mild and tender rather than hot, and carry the Basque Eusko Label quality seal for Ibarrako Piparrak.
Txumitxa is the brand of Ibarrako Langostinoak, a producer in Ibarra, the Basque village that gives these peppers their name.
Serve them with pintxos, on a gilda skewer with an anchovy and an olive, or alongside beans and stews.
