Duck rillettes with 25% foie gras (130 g)

Duck rillettes from Etxenike with 25% duck foie gras, in a 130 g tin. Shredded duck meat is cooked in its own fat, seasoned with salt and spices, and finished with duck foie gras for a soft, unctuous texture. The recipe also contains Ibérico pork.

Etxenike makes it by hand in Espinal, in Navarra in northern Spain.

Spread it on toast or fresh bread, or chill the tin and serve it in slices as a starter. Unopened, the tin keeps at room temperature, so it is easy to keep in the cupboard or to give as a gift.
