Natural cardoon stalks, extra grade (660 g)

Extra-grade cardoon from Victofer, preserved in water and salt in a 660 g glass jar (400 g drained). Cardoon is a traditional vegetable of Navarra, related to the artichoke. Victofer prepares it by hand and adds nothing but water and salt, so the stalks keep their natural flavour.

Victofer is a family business from Vitoria-Gasteiz, founded in 1922 and run by the third generation. It has made artisanal preserves since the 1960s, using vegetables from Navarra's market gardens.

Drain the cardoon and warm it with almonds, or with a sauté of garlic, diced pork belly and a little flour.
