Grilled squid in its own ink (160 g)

Grilled squid in its own ink from Conservas Braseadas Güeyumar, in a 160 g tin (100 g drained). The squid (Loligo spp.) is grilled over embers, which gives it a subtle smoky touch, and packed in a sauce of squid ink, onion, pepper and fish stock. The tin, "Calamar de otro planeta", is wrapped in retro arcade-game artwork.

Güeyumar preserves come from Ribadesella, Asturias, and grew out of Güeyu Mar, chef Abel Álvarez's grill restaurant on Playa de Vega, where fish and seafood are cooked over embers.

Warm it gently and serve it with white rice or bread to soak up the ink sauce.
