Chargrilled sardine tails in extra virgin olive oil (150 g)

Chargrilled sardine tails from Conservas Braseadas Güeyumar, in Arbequina extra virgin olive oil, in a 150 g tin (90 g drained). The sardines (Sardina pilchardus) come from the coasts of Asturias and the Rías Baixas. The tails are cut by hand, grilled over holm oak and packed in Arbequina extra virgin olive oil from Torre de Canena with a little salt.

Güeyumar preserves come from Ribadesella, Asturias, and grew out of Güeyu Mar, chef Abel Álvarez's grill restaurant on Playa de Vega, where fish and seafood are cooked over embers.

Serve them at room temperature on toast with tomato, or with roasted peppers and a drizzle of their oil.
