Artichoke hearts, extra grade, 16–20 hearts (400 g)

Artichoke hearts from Victofer, extra grade, in a 400 g glass jar (250 g drained) with 16 to 20 whole hearts. They are a mild, pale variety of artichoke, preserved in water with a little salt by a traditional manual process that keeps their flavour, aroma and texture.

Victofer is a family business from Vitoria-Gasteiz, founded in 1922 and run by the third generation. It has made artisanal preserves since the 1960s, using vegetables from Navarra's market gardens.

Cook them with diced ham, serve them with clams, or add them to salads.
